EXECUTIVE PASTRY CHEF

RESPONSIBILITIES

• Plan and craft menu specifications while directing kitchen operations
• Use effective measures to maintain high standard of food quality, safety and hygiene
• Plan, direct, evaluate and seek constant improvement in the food & beverage products & services, daily operations & workflow in the kitchen
• Plan menu and create new recipes on a timely basis
• Ensure that food quality standards including cleanliness, sanitation & hygiene are met
• Administrative duties, monitoring & processing of documentation required
• Perform a regular inventory of food supplies and equipment
• Responsible for the efficient management of food costs & wastageIdentifies issues/concerns and formulate recommendations for improvement
• Identify issues/concerns and formulate recommendations for improvement
• Work closely with different departments or divisions to achieve the common organizational goal

REQUIREMENT

• Possess a recognised trade certificates or equivalent in culinary skills
• At least 6 years’ experience as a Sous Chef (Pastry), or hold similar position in a leading hotel or catering establishment
• Knowledgeable in the preparation of exquisite pastries and desserts (preferably of local desserts)
• A flair for modern recipes and new culinary creations
• Excellent command of English
• Possess strong leadership qualities
• Conversant in HACCP
• Team player
